Pastificio Gilio

Photography by Gudrun Bargmann

The Gilio family opened its pasta factory 40 years ago and finally decided to close it for personal reasons in 2018. In 2020, at the height of the pandemic, Franco Redaelli saw the pastificio as an answer to his long-held dream of opening a business linked to the gastronomic world. He was fascinated by the workshop and its machinery and so he took over the pasta factory, without changing the name, as a challenge to himself to show that the business still had a long life ahead and could rise again.

After some experimentation and attentive study of the products, with the support of Francesco Gilio and a few members of staff, Franco succeeded in making Pastificio Gilio a true reference point in this sector for Como.

His small artisan business, made up of a young brigade of staff that brought in freshness and innovation to the workshop, he felt his way quietly into the market and has seen it steadily grow over time. Among the signature products of the pasta factory are filled pasta, lasagne, vitello tonnato and many other typical Italian dishes.
